The Viral Caramelized Onion Pasta That’s Actually Worth the Hype Creamy, cheesy, spicy, and packed with jammy onions—this is not your average pasta night.
Let’s be real: my love for chili oil is basically a personality trait at this point. When NM Brands sent me a bottle of their chili oil (NM = Not Mediocre), I knew exactly what to do with it—make the viral Caramelized Onion Pasta. And let me tell you, this version did not dissapoint.
There’s something deeply satisfying about a pasta dish that checks all the boxes: creamy, spicy, cheesy, and a little indulgent without being over-the-top. Caramelized onions bring that jammy, slow-cooked sweetness; chili oil brings the heat. And when they come together? It’s a flavor bomb in a bowl that feels like it took hours—but didn’t.
The result? An unapologetically rich, spicy, caramelized, cheesy bowl of comfort that made me question every other pasta I’ve ever had. This one’s a keeper.
Why this Recipe Works
• Low and slow onions: Caramelized to jammy perfection—takes time, but worth it.
• Double chili oil hit: Spicy layers from both cooking and finishing with chili oil.
• Creamy but balanced: The richness of cream and Parmesan balances the heat.
• One-pan magic: Minimal cleanup, maximum flavor. We love a lazy overachiever.
Tips for Making Caramelized Onion Pasta with Chili Oil
• Be patient with the onions: Low heat, constant stirring. You want brown and jammy, not crispy or burned.
• Use your favorite chili oil: NM Chili Oil added spice and tang. Lan Gao Ma brings that umami punch. Use what you like.
• Add water if onions start to burn: A splash here and there saves your skillet (and your dinner).
• Want more protein? Toss in a soft-boiled egg or leftover roast chicken.
🌱 A Bite of Sustainability
This dish leans into pantry staples and a minimal ingredient list, making it a great way to reduce food waste and use what you already have. Caramelizing onions takes time, not energy—so skip the takeout, save the gas, and let your kitchen do the magic. Plus, using chili oil from a small-batch brand supports independent makers doing spicy things right.
