If using artisan or other types of crusty bread, here are some tips:

  • Slice thin and small--aim for slices not thicker than 1/2 inch. Cut into small squares or triangles (2-3 inches wide).
  • Trim the Crusts--crusts can get too crunch or interfere with even frying. Trim for uniformity.
  • Press it Gently--artisan bread has a looser crumb than sandwich bread. Press the shrimp paste firmly into the bread to help it grip.
  • Light Toast First--lightly toasting the bread before adding the shrimp mixture can reduce oil absorption and help the paste stay on during or air frying.
