In a blender or food processor, pulse ricotta, 2 tablespoons of olive oil, and salt until smooth. Transfer to a bowl and stir in thyme and lemon zest. Chill until ready to serve.
Make the Spicy Honey
In a small bowl, whisk together honey, apple cider vinegar, hot sauce, and Creole seasoning. Set aside.
Grill the Peaches
