Pumpkin Goat Cheese Ice Cream with Bourbon-Date Swirl
Goat Cheese? In Ice Cream? Trust Me
Pumpkin spice is cute. Pumpkin goat cheese ice cream with a bourbon-date swirl? That’s a main character energy right there.
Welcome to another round of Pumpkin Reimagined, where basic pumpkin recipes are politely escorted out the back door. And what better way to say, “I’m not like other pumpkins” than turning it into a tangy, boozy frozen dessert that eats like a cheese plate got lost in a fall orchard?
You know I had to bring out the Ninja Creami. This machine is basically a member of the family at this point. Every series I do? It shows up, ready to churn dreams into dairy.
But I wasn’t about to do another pumpkin spice latte soft serve situation. No ma’am. I wanted complexity. Depth. Bourbon-soaked dates. And yes, a little tang from goat cheese because we’re sophisticated now.
Why this Recipe Works
• Pumpkin + Goat Cheese = Savory-Sweet Heaven--The goat cheese adds tang and creaminess that balances the earthiness of the pumpkin. It’s giving cheese board vibes in the best way.
• Bourbon-Date Swirl Brings the Drama--Sticky, sweet, boozy—this swirl is like a jammy caramel with attitude. It cuts through the richness and adds a surprise layer in every bite.
• Custard-Style Base = Velvety Texture--Egg yolks give it that luxurious mouthfeel that’ll have you thinking, “Ben & Jerry who?”
• Ninja Creami Does the Heavy Lifting--This machine turns a frozen brick into creamy, dreamy dessert magic. No churning, no fuss.
Tips for Making Pumpkin Goat Cheese Ice Cream with Bourbon-Date Swirl
• Use Good-Quality Goat Cheese--Go for something smooth and tangy. Avoid herbed versions unless you want your dessert tasting like a salad.
• Temper the Eggs Properly--Don’t scramble your custard! Slowly whisk in the warm mixture so your yolks stay silky, not scrambly.
• Let the Swirl Cool Completely--A hot swirl will melt your perfectly spun ice cream. Chill it in the fridge before adding.
• Don’t Skip the Mix-In Function--Gently incorporate the swirl after spinning so you get gorgeous streaks of date-bourbon heaven.
🌱 A Bite of Sustainability
This ice cream celebrates seasonal eating with fresh pumpkin puree, reducing waste by using small-batch ingredients and making use of your Ninja Creami—a machine that helps you repurpose leftovers and control portions. Using goat cheese also supports smaller dairy farms, often operating with more sustainable practices than large-scale dairy producers.
• 4 medjool dates, pitted and chopped – Sticky, sweet base

Pumpkin Goat Cheese Ice Cream with Bourbon-Date Swirl is a bold fall treat with creamy tang, warm spice, and a boozy, sticky-sweet finish made in the Ninja Creami.
Make the Custard Base:
1. In a small saucepan, whisk together milk, cream, pumpkin puree, cinnamon, and salt. Warm over medium heat until steaming but not boiling.
2. In a separate bowl, whisk egg yolks and sugar until pale and fluffy.
3. Slowly pour ½ cup of the hot milk mixture into the yolks while whisking (this tempers the eggs).
4. Pour everything back into the saucepan. Stir constantly over medium-low heat until thickened and it coats the back of a spoon (170–175°F).
5. Remove from heat. Whisk in goat cheese, vanilla extract, and bourbon until completely smooth.
6. Pour into a Ninja Creami pint container, cool to room temp, then seal and freeze for 24 hours.
Make the Bourbon-Date Swirl:
1. In a small saucepan, combine dates, bourbon, water, and a pinch of salt.
2. Simmer gently for 5–6 minutes until the dates are soft and the liquid is mostly absorbed.
3. Blend into a thick paste using an immersion blender or small food processor.
4. Let cool completely, then store in fridge until ready to use.
Spin and Swirl:
1. After 24 hours, let your base sit at room temp for 5–10 minutes.
2. Insert into the Ninja Creami and spin using the Gelato or Lite Ice Cream setting.
3. After spinning, create a shallow well in the center of the ice cream and add 2–3 tablespoons of the Bourbon-Date Swirl.
4. Use the Mix-In function to swirl it in.
5. Serve immediately and try not to eat the whole pint in one sitting. (Good luck.)
