- 8-12 qt water, depending on the size of the turkey
- 1 large onion, cut into quarters
- 4 celery stalks, roughly chopped

- 5 garlic cloves
- 1/2 bunch parsley
- 3 bay leaves
- 8-10 peppercorns
The Recipe
- 1 cup smoked sausage, chopped
- 1 cup celery, chopped
- 1/2 cup carrots, chopped
- 2 cloves garlic, minced
- 3 sprigs fresh thyme
- 1 bay leaf
- 2.5 tsp Kosher salt
- 1 tsp fresh ginger, peeled
- 1/4 tsp crushed red pepper
- 10 cups turkey or chicken broth
- 1 cup long-grain rice
- 2 cups shredded cooked turkey
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
