  • Leftover Turkey Carcass, including necks, giblets, wings
  • Leftover Turkey drippings
  • 8-12 qt water, depending on the size of the turkey
  • 1 large onion, cut into quarters
  • 4 celery stalks, roughly chopped
  • 2 large carrots
  • 5 garlic cloves
  • 1/2 bunch parsley
  • 3 bay leaves
  • 8-10 peppercorns

The Recipe

  • 1 cup smoked sausage, chopped
  • 1 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 2 cloves garlic, minced
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • 2.5 tsp Kosher salt
  • 1 tsp fresh ginger, peeled
  • 1/4 tsp crushed red pepper
  • 10 cups turkey or chicken broth
  • 1 cup long-grain rice
  • 2 cups shredded cooked turkey
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
