  • 4 tsp oyster sauce
  • 2 tsp dark soy sauce
  • 2 tsp grated fresh ginger
  • 2 tsp sugar
  • 1/2 tsp white pepper
  • 1 tbsp cornstarch
  • 1.25 lbs boneless, skinless chicken thighs, trimmed and halved crosswise
  • 2 oz dried shiitake mushrooms, rinsed
  • 1.5 cups jasmine rice, rinsed
  • 1 tsp table salt, plus 2 teaspoons salt for soaking rice
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • 2.5 oz lap cheong (Chinese sausage), sliced thin (optional)
