  • 2 tangerines, unpeeled and thinly sliced
  • 3 sprigs fresh thyme
  • 1 tbsp olive oil
  • 1.5 tsp kosher salt
  • 1 clove garlic thinly sliced
  • 1 cup sliced peeled tangerines
  • 1/4 cup roughly chopped fresh parsley
  • 2 tbsp cane vinegar
  • 1/2 tsp Creole seasoning
  • 1/4 tsp crushed red pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup roasted salted pumpkin seeds
  • Garnish: crushed red pepper, chopped fresh parsley
