The Sweet Potato

  • 5 large sweet potato
  • 1/2 cup unsalted butter 1 stick
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1/2 cup evaporated milk
  • 1 tbsp vanilla extract
  • 1/2 tsp Kosher salt

The Topping

  • 1.25 cup chopped pecans
  • 1/2 cup dark brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1/2 cup all-purpose flour

Notes

*if you do not have a food mill, just mash with a potato masher. You can also skip and use a hand-held blender to mix.
