How To Make Pumpkin-Orange Custard

In a heavy saucepan over medium heat, combine sugar, half-and-half, and heavy whipping cream. Stir constantly until the sugar dissolves and the mixture just begins to simmer (do not boil). Remove from heat.

In a separate bowl, whisk together the eggs, pumpkin, orange zest, Grand Marnier (or orange juice), ginger, and salt until smooth.

Temper the Egg Mixture:

Slowly add about ¼ of the hot cream mixture into the pumpkin mixture, stirring constantly to prevent curdling. Then pour the tempered pumpkin mixture back into the saucepan with the rest of the cream mixture and stir well.

Preheat oven to 324°F. Pour the custard evenly into six 6-ounce ramekins or custard cups. Place the ramekins in a 13×9-inch baking dish. Add hot water to the dish until it reaches 1 inch up the sides of the ramekins.

Bake for 45–50 minutes, or until a knife inserted in the center comes out clean. Remove the ramekins from the water bath and let cool on a wire rack. Then cover and chill for at least 2 hours.

How To Make Pumpkin-Orange Custard

  1. Preheat oven to 324°F. Combine sugar, half-and-half, and heavy whipping cream in a heavy saucepan over medium heat. Stir constantly until sugar is dissolved and mixture comes to a simmer (do not boil). Remove from heat.

  2. In a small bowl, combine eggs, pumpkin, orange zest, Grand Marnier (or orange juice if using), ginger, and salt and whisk until blended. Gradually stir about one-fourth of hot whipping cream mixture into pumpkin mixture; add this to the hot whipping cream mixture, stirring constantly. 

  3. Pour custard mixture evenly into six 6-ounce ramekins or custard cups. Place in a 13 x 9 inch pan; add hot water to pan to depth of 1 inch. Bake for 45-50 minutes or until knife inserted in center comes out clean. Remove ramekins from water, and cool on wire racks. Cover and chill at least 2 hours. Garnish with sweetened whipped cream and orange rind strips if desired.
