Pumpkin Goat Cheese Ice Cream with Bourbon-Date Swirl is a bold fall treat with creamy tang, warm spice, and a boozy, sticky-sweet finish made in the Ninja Creami.
Make the Custard Base:
1. In a small saucepan, whisk together milk, cream, pumpkin puree, cinnamon, and salt. Warm over medium heat until steaming but not boiling.

2. In a separate bowl, whisk egg yolks and sugar until pale and fluffy.

3. Slowly pour ½ cup of the hot milk mixture into the yolks while whisking (this tempers the eggs).

4. Pour everything back into the saucepan. Stir constantly over medium-low heat until thickened and it coats the back of a spoon (170–175°F).

5. Remove from heat. Whisk in goat cheese, vanilla extract, and bourbon until completely smooth.

6. Pour into a Ninja Creami pint container, cool to room temp, then seal and freeze for 24 hours.

Make the Bourbon-Date Swirl:
1. In a small saucepan, combine dates, bourbon, water, and a pinch of salt.
2. Simmer gently for 5–6 minutes until the dates are soft and the liquid is mostly absorbed.
3. Blend into a thick paste using an immersion blender or small food processor.
4. Let cool completely, then store in fridge until ready to use.

Spin and Swirl:
1. After 24 hours, let your base sit at room temp for 5–10 minutes.
2. Insert into the Ninja Creami and spin using the Gelato or Lite Ice Cream setting.
3. After spinning, create a shallow well in the center of the ice cream and add 2–3 tablespoons of the Bourbon-Date Swirl.
4. Use the Mix-In function to swirl it in.
5. Serve immediately and try not to eat the whole pint in one sitting. (Good luck.)

- Pour into Creami pint container, let cool to room temp, then seal and freeze for 24 hours.

- Blend into a thick paste using an immersion blender or small food processor. Let cool completely. Store in fridge until ready to use.

Spin and Swirl in the Ninja Creami
- After 24 hours, remove the frozen base and let sit at room temperature for 5-10 minutes.
- Insert into the Ninja Creami and spin on Gelato or Lite Ice Cream setting.
- Once spun, create a shallow hole in the center of the ice cream and spoon in 2-3 tbs of the Bourbon-Date Swirl.
- Use the Mix-In function to gently fold in the swirl. Serve immediately
