I’ve loved this one ever since I first tasted it at a neighborhood Greek restaurant and found myself practically licking the bowl clean. Remove the skin and innards from the chicken. Place it in a large stockpot with 6 cups of water, onion, and carrot. Bring to a boil, skimming foam as needed. Reduce heat and simmer gently, covered, for about 1.5 to 2 hours for a richer broth. Remove chicken and strain the broth, discarding vegetables. Return strained broth to the pot.

Bring the broth back to a boil. Add 3/4 cup orzo and simmer for 15–20 minutes until tender.

How To Make Greek Avgolemono Soup (Lemon Chicken Soup)

  1. Make the Stock

    • Add chicken, water, onion, carrot, celery, garlic, bay leaves, salt, and peppercorns to a large pot. Bring to a boil, then reduce to a gentle simmer. Skim any foam that rises to the top.
    • Simmer, partially covered, for at least 1½ hours (longer for a richer broth). Remove the chicken and set aside to cool slightly. Strain the broth and return to the pot.
    1 whole chicken, 6 cups water, 1 onion, 1 carrot, 2 celery stalk, 3 garlic cloves, 2 bay leaves, 1 tsp salt, 1/2 tsp black peppercorns
  2. Add the Orzo

    Bring the strained broth to a gentle boil. Add orzo and cook until just tender, about 10–12 minutes.

  3. Shred the Chicken

    While the orzo cooks, shred the chicken into bite-sized pieces. Add about 1½–2 cups of shredded chicken back into the soup (save leftovers for another dish!).

  4. Prepare Avgolemono

    • In a medium bowl, whisk egg yolks and lemon juice until smooth. Slowly ladle in about ½ cup of hot broth, whisking constantly to temper the eggs. Repeat with another ½ cup of broth.
    • Slowly pour the tempered egg-lemon mixture into the pot, stirring constantly over low heat (do NOT boil) until slightly thickened and silky. Season to taste with more lemon juice, salt, and pepper.
