 Shape the Pretzel Bites:

Preheat oven to 450°F (232°C). Line two baking sheets with parchment paper. Punch down risen dough and divide into 24 equal pieces. Flatten each piece into a small disc. Place a marinated cheese cube in the center. Pinch edges together to seal and roll into a smooth ball. Place seam-side down on the prepared baking sheet.

In a wide pot, bring 8 cups of water and 1/3 cup baking soda to a rolling boil. Working in batches, carefully lower pretzel bites into the water and boil for 20 seconds. Remove with a slotted spoon and place back on the baking sheet.
