Add the ice water and pulse until the crostata dough just comes together. Pat the dough into a disk, wrap well in plastic wrap, and refrigerate for 30 minutes.
Roll and Cut the Dough:
On a lightly floured surface, roll out the crostata dough to ⅛-inch thick. Cut out eight 5-inch rounds, rerolling the scraps if necessary. Transfer the rounds to a parchment paper-lined baking sheet and refrigerate for 30 minutes.

Fill the Crostatas:
Preheat the oven to 375°F. In a bowl, toss two-thirds of the green and purple fig wedges with 3 teaspoons honey, fresh lemon juice, thyme leaves, and a pinch of salt. Arrange the fig wedges on the dough rounds, leaving a ½-inch border all around. Fold the edges over the figs and brush the dough with the egg wash. Chill for 30 minutes.

Bake and Serve:
Bake the fig crostatas for about 35 minutes, rotating the baking sheet halfway through baking, until the crusts are golden. Let stand for 10 minutes. Gently toss the remaining figs with the remaining 2 teaspoons honey. Transfer the crostatas to plates, then top with the honeyed figs and thyme sprigs. Serve.
