Caramelize the Onions

In a large skillet over medium heat, melt butter and olive oil. Add onions and reduce heat to low. Cook for about 45 minutes, stirring frequently until onions are deep golden and jammy. Add a splash of water if they start to stick or burn. Remove and set aside.

Make the Sauce

In the same skillet, add 2 tbsp of chili oil. Sauté garlic over low heat for 15 seconds until fragrant. Slowly stir in heavy cream and let it simmer for 5–6 minutes until thickened.

Add the caramelized onions back to the skillet. Toss in cooked spaghetti and mix until fully coated. Stir in Parmesan cheese and remaining 2 tbsp chili oil. Mix well. Garnish with parsley.

How To Make Caramelized Onion Pasta with Chili Oil

  1. Caramelize the Onions

    In a large skillet over medium heat, add butter and olive. Add onions and turn heat to low. Cook the onions for 45 minutes, stirring frequently until it's cooked down and jammy. Do not rush the process. If they start burning, add a bit of water and continue to stir. Onions are done when they are brown and jammy. Remove to a bowl and set aside.

  2. Make the Sauce

    • To the same skillet, add 2 tablespoons of the chili oil. Add the garlic and cook for 15 seconds on low. Add the heavy cream slowly and mix to combine. Cook until it thickens, about 5-6 minutes. 
    • Add back in the onions. Add the pasta and mix to combine with the sauce. Add the parmesan cheese and mix to combine. Add in the rest of the 2 tablespoons of chili oil and mix to combine. Garnish with parsley.
