A Rainbow in a Bowl
If there’s one salad I could eat on repeat and not get bored, it’s this one. Bright, crunchy, packed with flavor and color, and topped with a dressing so good, you’ll be tempted to skip the veggies and go straight to the bottle. This Edamame Cabbage Crunch Salad is my go-to when I want something easy, healthy-ish, and borderline addictive. Bonus points: it’s basically a fridge-cleanout miracle.

This isn’t your sad desk salad. This is the salad that knows it’s the main event. It’s got texture. It’s got color. It’s got personality. The edamame brings the protein, the cabbage brings the crunch, and the dressing? Yes, it’s basically drinkable.

And while this bowl is a stunner on its own, I love adding grilled shrimp, chickpeas, or whatever needs to be rescued from the veggie drawer.

Oh, and did I mention this is basically a chop-it-all-up and toss-it kind of situation? No roasting, no sautéing, no complicated steps—just an excuse to eat a really, really good salad that happens to look like edible confetti.

Why this Recipe Works

• Quick and easy – Done in under 15 minutes with minimal cleanup.
• Great for crowds – Perfect potluck or cookout salad that holds up.

Tips for Making Edamame Cabbage Crunch Salad
• Customize it your way: Add grilled shrimp, chickpeas, tofu, or even rotisserie chicken if you want to boost the protein.
• Make-ahead magic: The dressing can be made up to 5 days in advance and stored in the fridge. Just give it a good shake before using.
• Texture is everything: If you want more crunch, toss in some toasted almonds, cashews, or crushed ramen noodles just before serving.
• Spice level? Your call: Want it fiery? Add extra chili flakes. Prefer it mild? Dial back the sriracha.
• Serve it your way: This salad is great on its own or as a side with grilled meats, rice bowls, or even tucked into lettuce wraps.
