Sunday Supper Series — Roasted Honey Carrots with Sunday Supper Series — Roasted Honey Carrots with Whipped Ricotta

This is the second recipe in my Sunday Supper Series, and it’s the kind of side dish that makes people actually want to sit down and stay a while.

The goal with this series isn’t just comfort food. It’s about getting back to the table. Slowing down, catching up, and being in the same place for more than five minutes. I feel like we’ve lost a lot of that, and honestly, I think it matters more than we realize.

Now yes, these are carrots. But not just roasted and forgotten on the side.

They’re tossed in a honey butter glaze while still hot so they soak it up, then served over whipped ricotta that makes the whole thing feel a little more put together than it probably should be. It’s simple, but it works.

Pair this with the meatloaf from the first post, and you’ve got a Sunday dinner that might actually bring people back to the table.

This is where it starts.

Sunday Supper.
A series built around comfort food, but really, it’s about getting back to the table.

There was a time when Sundays meant something. Everyone showed up, sat down, passed plates, and took a minute to just be together. Now it feels like everyone’s eating at different times, in different rooms, doing their own thing.

So this is my way of bringing that back.

We’re starting with meatloaf — the kind that’s mixed with onions and peppers, baked until just right, and finished with a tangy ketchup glaze that makes it worth going back for another slice.

It’s simple. It’s familiar. And honestly, it’s the kind of meal that makes people stay a little longer at the table.

Gochujang Pulled Pork Sandwiches with Pickled Vegg Gochujang Pulled Pork Sandwiches with Pickled Veggies and Kimchi Mayo

My boss — I mean, my niece — requested this one.

Her request: “spicy and juicy.”
That’s it. No notes, no follow-up questions.

So I went with gochujang for the heat, slow-cooked the pork until it was tender, and turned the cooking liquid into a glossy sauce that you can either toss with the pork or drizzle right over the top.

But the part that makes this sandwich work?
The pickled vegetables and the kimchi mayo.

The pork is rich and spicy, so you need that contrast — something bright, crisp, and slightly sweet to cut through it. The pickles do that. And the kimchi mayo brings everything together with a little extra depth and creaminess.

My niece said it’s the best pulled pork sandwich she’s ever had. I’m not arguing.
